Green Curry In Coconut

I love that they offer so many of their curries in a whole coconut here, because the addition of coconut meat really makes the curry more hearty and tasty! This is one of the dishes I chose to make in a cooking class here, and I can attest to the freshness of the ingredients used. The baby Thai eggplant is my favourite in this curry. So good!
