Gochujang 🍄‍🟫 Taco

This was a collaboration with Plant Based Papi for the Circle V Portland 2024 Vegan Food & Drink Festival. It consisted of hand-pressed tortillas filled with gochujang cream sauce and grilled king oyster 🍄‍🟫 seasoned with sea salt, topped with grilled pepper kimchi salsa, fresh cilantro.
