Breakfast Zoodle Bowl

Zucchini zoodles topped with tofu scramble, sautéed tomatoes, mushrooms, onions, peppers and carrots, then finished off with melted cheddar, salsa, sour cream, and green onions. It's light and refreshing but the cheese and sour cream make it feel so decadent, plus the salsa packs a ton of flavor. This one is so much greater than the sum of its parts.
