Cà om chuối đậu~ I had a similar dish in Hoi An last year, and recently also ate a similar dish at Moon Chay (lots of Vietnamese veg eateries all of a sudden 👀), so I knew I had to try this! The thick starchy gravy was sweet and savoury, served with green banana (with a texture kinda like sweet potato or other root veggies), tender eggplant, king oyster mushrooms, and fried beancurd. 🍌🍆🍄 NGL I wasn't such a fan of the almost gloopy consistency of the gravy, but the taste was good and was further elevated when we added some cut chilli!
