Best snickerdoodle yet

A giant, warm snickerdoodle cookie and coconut ice cream. It’s like a horchata that you chew - in the best of ways! I appreciated that the cookie was extra crunchy so it didn’t turn into a soggy mess while the ice cream melted. Big enough to share for 2-4 friends, or if you’re up for the challenge you can have it all to yourself like I did 😉

This was my favorite dish from the restaurant. Unfortunately, it was not served with the graham cracker crumbs it was supposed to be topped with, but instead smothered in powdered cinnamon. Also, the cookie was hard as a rock, and eating it with the fork I was given was near impossible. I ended up losing a large portion of my dessert to the floor and table because the fork wouldn't break through the cookie. After that, I decided to use my fingers to bust up the cookie and dip the pieces into the ice cream which was extremely messy. But the flavor was great!
