AAA EGGPLANT SANDWICH

I’ve wanted to try Hawker ever since I found out about it, since it only opened after I left Toronto. The restaurant itself is beautifully earthy and natural with lots of greens and browns. Their sandwiches are known to be amazing, and indeed I was amazed. This eggplant one was smoky and sweet with a tomato jam, fresh watercress and a smoked poblano cashew spread, plus I added fava bean tofu for some protein. I loved the slight bitterness of the watercress paired with the creamy and sweet elements. The bread was also perfectly crispy and soft in the middle.

Nice sandwich with very tasty ingredients, the bread was good and fresh. The eggplant was delicious.
