I've had the official Stardew Valley cookbook for a while now but I've never made anything from it. It is packed with animal products, but the recipes can be veganized if you have enough vegan cooking experience. @jonok brought home a monster eggplant that needed to get used up. I scoured my cookbooks for an eggplant parm recipe when I remembered that there's eggplant parm in Stardew! I made my own ricotta with MinnTofu soft tofu, and used Violife feta instead of goat cheese.
This parm wedge holds up to the fancy stuff from Rebel Cheese! It's salty and funky and shreds well with a microplane for fancy plating. It worked really well in this recipe! My arm was sore after all the grating, but it was worth it! It worked much better than pre-shredded parmesan.
