These little yellow potatoes were perfect for making smashed potato tacos. First, I boiled them until they were almost done, but not quite, then I smashed them and roasted them with a little bit of olive oil, salt, pepper, and some herbs.
Once they were perfectly roasted and crispy, we piled them on some mini tortillas, with a drizzle of ranch sauce, green onions, and tofu bacon bits. 😋
