These are some of the best nachos I've had. I have the recipe for the queso and the jackfruit carnitas that I got during VegFest one year. The cashew cheese is so yummy and the carnitas have a nice citrus-y taste. The pickled jalapeños and red onion made the nachos so pretty. I also really like the chips they use! It's a nice messy meal for May Day.
