I love fancy cheeses. This one is a combination of some fun flavors. Cranberry suggests a good winter cheese, but I think it would be a good anytime-of-year cheese! It's not sweet, which is great for me because I typically don't like sweet cheeses. The cranberry comes through really tart, which goes well with the bite of the cheese. The paper shows up a bit later with a distinct burn. It reminded me a bit of a toned down version of the sumac rose chèvre from Rebel Cheese.
