I bought this can of Rooster Coconut Cream for an ice cream recipe. Otherwise, I don’t know what I’d do with it. The recipe was a vegan mango ice cream to be made with cubes of mangoes (obviously), coconut cream, maple syrup, and vanilla extract. I substituted strawberries for the mangoes only because I didn’t have any mangoes at the time. Unfortunately, this ice cream wasn’t very creamy. I don’t know if it was because of the fruit substitution or if I had done something wrong. The frozen consistency of this ice cream was that of shaved ice as opposed to a creamy ice cream. I eventually let it melt / soften a lot, and I thought it tasted much better. Regardless it still tasted very good both frozen and partially melted. The coconut flavour was very evident. 
The coconut cream, which I’ve never used before, was incredibly white and thick. I was surprised at how fattening it is, so I probably wouldn’t use it too often. I tasted a bit of the cream on its own and it was very delicious. It would probably go well in a variety of recipes. 
I would definitely make this recipe again using the coconut cream and I would try a variety of fruit. Maybe it would turn out to be much creamier with mangoes.
