Wow, I've usually found such skewers with tofu but never with seitan and I loved this version. I think there is no need to let them remind of chicken, they are perfect just the way the are. They are super crunchy and with a solid texture inside, quite layered and really pleasant.
As for the rest of the dish, there are a lot of fresh veggies and you can decide which sauce you want. I chose tamarind, as I usually don't find it in Berlin, and it was really delicate but still flavourful. I guess peanut sauce would also be great here.
