I've known about Stanley's and their wide vegan offerings for a while now. Trying their Vegan Chef Challenge entry was a good excuse to go at the end of August! These nachos aren't the entry, but they were a great starter! I've had the vegan nachos years ago at The Howe and loved them. The Howe and Stanley's have the same owners, so I knew I could trust the nachos here to be good! They used a cashew queso and some kind of plant based chorizo. I really enjoyed the chorizo. It has a nice kick to it that built up with this dish. The guacamole is a nice touch too. Like most nachos, the downside is that there are some very loaded chips and some very bare chips. It was hard to ration everything for those dry chips. More queso would be great!
