Island Vybz just recently opened up in Flemington and they have a HUGE variety of vegan options. Their portions are very reasonable and the food always tastes great. The sauté tofu comes with your choice of 2 sides, so I got rice/beans and steamed veggies. You can get a third side for an extra charge and I may or may not have splurged for the sweet plantains (and I don’t regret it one bit). The only concern I have is that their prices have gone up quite a bit since they first opened, but I believe it’s a family owned restaurant so that might have something to do with it.
