Good basic red enchilada sauce. Our favorites are sautéed chopped broccoli with onions, black beans, brown rice & vegan cheddar cheese, covered in red sauce & topped with another sprinkling of vegan cheddar. Great make-ahead meal to pop in the oven, heat through & voila!
