I was just messing around on deliveroo as I miss Vietnamese food. The last time I had pho was in Ho Chi Minh City (Saigon) in Vietnam which was like 3 years ago.

I was surprised to find this Vegan Pho and it was good!

The broth was so flavorful, and I don’t really know how to describe it other than that. It was really good. The tofu was firm with a nice texture and the seafood was typical of any other Asian mock seafood. Overall very enjoyable. It’s kinda pricey at $14 so I think this is a once in awhile meal.

Also really appreciate separating the noodles from the soup! It allows the rice noodles to not get soggy!
