Really delicious vegan version of the traditional “barbacoa” 🇲🇽 Great presentation with nopales, rice and guacamole 💚 This one is made of soy but they also have the same meal prepared with mushrooms 💯 Definitely a “must try” 👍🏼 #veganuary #mexico
