I’m all about easy quick weeknight dinners so this jar of enchilada sauce made a quick and delicious dinner for tonight! The enchiladas tasted better than they looked! Stuffed with sweet potatoes, kale, spinach and soy chorizo and topped with daiya pepperjack cheese.
