Such a generous and filling portion. No soya so great if you’re avoiding that. It’s more of a vegetable lasagna than a ‘meat alternative’ version. Aubergine, red peppers, lentils and mushrooms make the bulk of it topped with vegan cheese. Utterly delicious 😋
