This was a surprising find in a hole in the wall coffee shop. It’s spinach, kale, black quinoa, hummus, avocado, tomatoes and cucumber. The dressing is a simple lemon and olive oil dressing that highlights this dish.

Oh...Local Joe’s has a machine that can scan an image and turn it into coffee art. I drew the little guy on a napkin and they put it on my coffee!
