La Huaca has a lot of vegetarian options. I opted to modify the Lomo Saltado, a Peruvian classic into something more vegan friendly. The restauranteurs we’re happy to accommodate me. I made the right choice too - Soy drenched veggies, fries and rice? What’s more to love?
