Carbonara - cashew cream, mushroom bacon, cauliflower, broccoli

This dish was really creamy and very satisfying, it bought back memories of childhood (non-vegan) carbonara which is my favourite and it's been very hard to find a good alternative. This one comes pretty close! Could do with more mushroom bacon and broccoli though.
