Nice, creamy latte veganized with soy milk - for a 0,44€ surcharge 🤬. The latte alone is 2,22€, so almost 3€ for a coffee you can usually get for under 2€ is too much, and doesn't make up for the cool vibe. We returned to have brunch at this hip coffee lab/bar, and I am reviewing this dish again as they had vegan tuna this time. Wow what a difference from the no-salmon! It had a nice sea and salt taste, lovely thick slices and the flavor was stunning. The garnishes added to this delight, vegan pesto drops, chili pearls and dijon mustard with a generous sprinkling of sesame and seaweed. This dish of no-chicken with Ras Al-Hanout was just ok, and pales in comparison to the other items on the menu. They were out of the pumpkin cream so we were offered cauliflower cream instead. Maybe the original dish flavors are on par with other plates. Lovely marinated tomato tartare mixed with equally tender sun-dried tomatoes and chia seeds, then topped with vegan parmesean shavings. Served with basil pearls. So delicious! Upon arrival and announcing our group was vegan, the server explained that the cheese could be substituted (at no cost) 💚. The list item of the menu, Psamathe (goddess of sand), intrigued us with the "chef freestyle." We ordered it only indicating we were vegan, and it turned out to be my favorite dish!! Topped with vegan bacon that tasted divine, the layers were a thick broccoli cream sauce, sauteed spinach, sauteed mushrooms and marinated tomatoes. Oh my Triton this was good!! This new place in town includes several creative vegan options on their menu! This dish of vegan salmon (they were out of no-tuna) sashimi had a texture that was spot-on, and just lacked a bit of "sea" flavor, but that did not deter us from devouring it!! The dijon mustard, vegan pesto, and spicy chili pearls gave fun taste options to pair with the sashimi. The guys who opened this spot are super friendly as are the wait staff. The vibe is somewhere between chill, skate and rocker, the décor follows the Triton theme under water - definitely a place we will be revisiting.
