When we initially ordered our brunch, I felt weird about getting chowder before noon even though it sounded tasty. I waited until towards the end of the drag show to go back and try it out. It wasn't as great as I was hoping. It just wasn't as flavorful and fresh tasting as I expect from elote. I was expecting some cotija on top, but maybe the creaminess of the chowder was in reference to that. I was also hoping for more tajin-like seasoning with lime acidity. And as much as I like cilantro, I'm sad to report this might actually be too much cilantro! They added potatoes to this chowder which made it a bit hardier than if it was just corn. This was another great brunch offering at the Fairly Dusted Drag Show! It looked daunting to eat with my hands, but it surprisingly was manageable and not too messy! The Maitake mushroom bits were so meaty and delicious. They had just a little spicy kick to them. The creamy chimichurri- type sauce on top helped cool down the heat. It provided a really nice fresh, herbaceous flavor to this sandwich. It was the most expensive thing on the small menu today at $15, but that's to be expected somewhat with these rarer mushroom varieties. I had such a fun time at the Fairly Dusted Drag Show at Fair State with a full vegan menu from Root to Rise! It's so great to see veganism, LGBTQ+ artistry, and a unionized business come together for a great brunch. You wouldn't think pasta would be a good brunch option, but the butternut squash brought a sweetness that made it feel so right! The giant shells were piping hot and stuffed with a super creamy mixture of squash and cashew ricotta. They drizzled something over it that I think is agave or some type of syrup. It added to the butternut squash sweetness and was a surprising but welcome addition. The few little arugula leaves are more for a garnish, but added a nice peppery freshness. I do wish they added a bit more. The dish came with four shells, making it very easy to split with @jonok. This felt like a wholesome, healthy choice at Vegfest. The queso-like sauce was really flavorful and had a little spice to it. I definitely liked the flavor, but it was colder than I was expecting. The dish would have been so amazing if it was served hotter. I know it's hard to cook food to the desired quality in a tent, so I don't hold this against Root to Rise. The big chunks of delicata squash were super tender and I loved their sweetness. There were a few potatoes, but the squash really seemed to dominate. #vegfest #tcvegfest #vegancheese #spicy

We went to the Plant Based Pop Up in Minneapolis and Root to Rise was there. We’ve had the Mac N Cheese Veggrolls before and they are a party in your mouth. The Nashville Fried Maitakr sandwich was a new dish. It was so big there was no way I could get a regular bite so had so cut it up. It’s amazing that they can turn mushrooms into such an amazing dish. The flavors were amazing and I would definitely get it again!
