The finale to our wonderful vegan meal was this dessert comprised of fried #phyllo dough, #strawberry, #apple and #pistachio. Chef Manuel passionately described it as a phyllo dough that had fermented for 4 or 5 days, fried until crispy. The sauce at the base was his strawberry and apple compote, with another layer of his own pistachio sauce. Then layers of phyllo, fresh strawberries and apples, and drizzles of his sauces were topped with a sweet crumble and more pistachios. It had just the right level of sweetness. The mix of textures and flavors was mindblowing, and another testament to Chef Manuel's boundless creativity! To enjoy his vegan creations, call a day in advance to make a reservation and request vegan dishes. When I contacted Chef Manuel, he got so excited to have us and said he would make dishes based on what was available at the markets. He also mentioned that he would provide a dessert so that we could have a complete meal experience. So delicious, savory and unique!!
