This opened package has been in my freezer for a few months and I figured it was time to either finish it up or toss it. We made "beef" and broccoli with jasmine rice for dinner tonight and it was super tasty!! I had never used faux ground beef in an Asian style dish and it soaked up the sauce and flavours quite nicely. I was all about the Impossible and Beyond Meat faux beef products when they first came out, but it's so heavily processed and high in sodium that I very rarely buy or eat it these days. It also wierds/grosses me out a bit that the ground "meat" is pink ..and turns brown when cooked. I mean, we are vegan or vegetarian for a reason!! I don't want to mimic cooking real meat!




I first tried an Impossible patty a few years ago. It kind of creeped me out because it looked so real while cooking it. It’s bloody red🩸🧛‍♀️ and then browns while it cooks. And then the taste was just as I remembered meat from almost 30 years ago. I was fine going back to my usual Beyond, veggie, and bean patties. But recently, I’ve been having a hard time retaining iron. Since Impossible Beef has heme (from soybeans), and iron from heme is easier to absorb, I reminded myself that #veganisnotscary because no animals were harmed, so I’ve been getting this occasionally. I made a delicious lasagna with this, and I even used a non-vegan recipe. I added zucchini, mushrooms 🍄‍🟫, and spinach This pack is supposed to be three servings, but this is working out to be 9 servings for me with my lasagna. For the ricotta, I used Kite Hill (also delicious). For the Parmesan, I made it from scratch with one of my favorite recipes (I’ll provide a link at the end). For the mozzarella, I used the shreds from Violife and topped it off with Miyoko’s pourable meant for pizza, but also fantastic for lasagna because it bubbles and browns. This lasagna is so good that I forgot three times to take a photo, one for the whole casserole, and then again when I had my first slice, and then again today when I reheated a slice. So the photo of this one is right out of the fridge, which doesn’t look as nice because the cheese isn’t melted, but I wanted to post this today so that I could add #nationalmushroomday 🤓. This is loaded with #protein, #iron, and #calcium and too many other nutrients to list, so I just posted a photo. About the only drawback I notice is the #highinsaturatedfat, but it’s still way less then animal ground beef, and I feel that all the added nutrients outweigh this.
