Vikas’ Vegan Bowl

I’m constantly amazed by the sheer amount of high quality nutritious food I can get here. If you look at the photos, you’ll see broccoli and Sichuan tofu with some almonds on top. But what you’re missing is underneath, a mountain of eggplant, baked tempeh and whole grain fusilli pasta. Every bite is incredible!
