Vegan Tofu Scramble

Had this dish on our last trip to Asheville and it was my best breakfast of vacation. Light, filling, and flavorful!

Pretty good tofu scramble! Seasoned well, but just a tad bit oily. I’d get it again while getting brunch with friends 🌞
