Vegan Breakfast Sandwich

I didn't even attempt to eat this sandwich with my hands! It's so stacked and held between somewhat brittle focaccia. It has vegan sausage, Gouda, and JUST Egg with arugula, confit tomato, avocado, pickled peppers, and a creamy pesto. I really like the bread. It's definitely better to eat with a fork. The sandwich definitely needs the creamy sauce.
