Sweet potato, apple and basil bake

I went on an adventure to Lancaster and tried some vegan cafes! I was recommended to try the whale tail multiple times so I decided to see what all the fuss was about. For this cafe I’d say don’t be quick to judge as I originally thought the set menu looked a bit boring however when looking at their specials I was blown away by choice! This dish was outstanding I could of ate it all over again. Bare in mind this is a vegetarian cafe with vegan options so just look out when ordering! I’ll definitely be visiting again
