Strawberry Bomb Cupcake

Back at my favorite bakery! My sister and I came here a while back on our first visit to Disney Springs and I remember being so caught off guard by the completely vegan menu that it took me forever to decide! This time it still took me a while but I settled on a lovely strawberry bomb cupcake that did not disappoint! I loveee fruit and berry flavors and this one had a delicious jam on top and inside! I have found that the fruity cupcakes are always nice and moist while the other cupcakes (like the Cookie Monster my sister selected) can tend to be a bit drier. Either way, we both highly enjoyed our treats! This was my second trip to Eric McKennas bakery. I got the strawberry bomb cupcake, which is a vanilla cake with vanilla frosting and a strawberry jam in the center. The cake was quite dry and had a very crumbly texture. The frosting was nice, not too sweet, and the jam in the center was good.
