Southwest Quesadilla

Always kinda had a thing for a nice Quesadilla (it has to be good tho) and I’m not mad at this Southwest style one bit! The whole wheat tortilla is filled with cashew cheeze, wild rice, black bean-corn salsa, red pepper, & carmelized onions and comes with guac, pico de gallo, and garlic cashew cream - so packed full of fresh, delicious flavors that you don't even miss any chk'n / not meat!! The quesadilla was incredible. The cashew garlic sauce on top was to die for. The plate in the background is the Tuscan kale wrap. That was incredible as well. Both meals were healthy and we left feeling energized.
