Roasted Pumpkin and Corn Enchilada

Flavours are a party in your mouth! I added their house brand passionfruit hot sauce to add a tang to it.

Prefer the tacos to the enchilada, but this was still a pretty good dish! Didn’t really taste much of the pumpkin though. Quite filling too! #veganisnotscary #singapore #veganmexican

This city needs more vegan enchiladas!!! These are vegan by default and come with a delicious verde and roja sauce topped with a tonne of cashew crema (SO GOOD!). The flavour of the dressings were definitely the hero of the dish (and not so much the fillings) – I found the inside to be a bit basic and bland. Even so, these looked and tasted great and I would definitely order this again!
