Roasted Porcini Mushroom & Pumpkin Risotto

Really impressed by the quality of the vegan dishes at Pete's Place. The chefs at the Grand Hyatt have really taken their game to the next level with this risotto. If you like risotto but don't like feeling weighed down, try their version without all the cream and butter. It was still really hearty and the risotto was perfectly cooked al dente.
