Risotto alla zucca

This risotto was deliciously creamy and very decently filled with pumpkin, mushrooms and cauliflower. I struggled a bit with the fennel undertone, but that is just a personal taste issue :) I couldn't finish it as it was quite filling, but I can't wait to eat the rest of it at home!
