Pesto Kale Salad (vegan version)

This consisted of mixed kale greens, house marinated artichoke hearts, multicolored grape tomatoes, and vegan pesto dressing (not the default creamy pesto dressing) plus roasted beets, bell pepper medley, and Mama Lil’s spicy peppers.
