Peanut Butter Vegan Pancake, Soy Sausage, & Home Fries

the pancake is exactly the kind of vegan pancake i want to get at a diner or cafe - big, tasty, and not overly "healthy" - i.e made with buckwheat flour or something like that 😬 being served with real maple syrup was a definite plus, and i was given enough to be able to put some on my sausage! the sausage was from Lightlife which is imo the best vegan breakfast sausage. overall a great meal with great service. will definitely come again next time i'm in pittsburgh!
