Portia's Pad Thai is awesome. I can't believe it's taken me so many years to try it. I had honestly heard not great things about it, just because it's not like normal Pad Thai. It's a raw version, so she also doesn't use peanuts because they're highly allergenic and often have mold. Instead, I believe she uses almonds and coconut milk, which are actually better for you. I believe they also use kelp noodles so they are #glutenfree you can also get it on brown rice as a base. I love how this Pad Thai is full of veggies, including peppers, onions and locally grown broccoli, and sunflower sprouts. Additionally, they use fresh lettuces that are locally grown. Portia is all about getting all of the nutrients in her dishes. This dish does have soy due to the liquid aminos, but like everything at Portia's, it's gluten-free and mostly #organic She always sources locally when possible, and you can actually see the farmers coming and dropping off the produce, which is awesome. I definitely recommend this dish! You can also have tofu added to it if you wish. It is a bit more pricey because its raw and they have two different sizes to choose from. This was so tasty! It's not like normal pad thai if that's what you're expecting - it consists of kale, carrots, and purple cabbage with a super flavorful sauce over brown rice or kelp noodles. Very colorful and crunchy. The dish is mostly the sauce honestly which is a bit weird, but it was amazing. I tried kelp noodles as the base. It was my first time trying kelp noodles and I was very surprised by the texture!! It was like eating crunchy sprouts. I love it!
