Interesting spin to lasagne. Protein rich as filled with lentils. Salad has a nice vegan mayo too.
I had to go back here while I was in Singapore! Genesis is tucked away in the basement of a small shopping mall, so it's a little tricky to find if you don't know where to go, but worth searching for. I had a delicious laksa last time I visited. Decided to try the lasagne this time - very tasty and filling.
Probably the most popular menu item at Genesis Vegan, glad I finally got to try it! Indulgent savoury lasagne made using nutritional yeast, cashew sauce, tomato sauce, mushrooms, carrots, and brown lentils. I was pleasantly surprised by how good it tasted, moist and umami, not meaty per se but kind of like having cheesy vegetable stew layered between soft pasta sheets. Really appreciated that it was made using natural ingredients, because I'm not a fan of the gloopy texture that vegan processed cheese tends to have. Served with a side salad consisting of pea sprouts, shredded carrot, red cabbage, and lettuce to balance things out. Would recommend this! Really yummy lentil lasagna, one of my favourite dishes in town!
Overall filling and a lot of flavour. The pasta sheets are soft. I did not find it super delicious, I like that they used lentils which are healthy healthy! I would prefer a bit more cheese flavour to it, could not taste it from the top - maybe it just does not have vegan cheese. The side salad does serve as a good side to balance the dish.
