This consisted of tender, earthy, spiced and roasted beet slices, vegan 1000 island dressing, sauerkraut,
and melted vegan mozzarella on a toasted gluten-free baguette. This had a satisfying mix of complementary flavors. Served with a cup of hearty Chipotle Black Bean Chili that was topped with jalapeño cashew sauce, chimichurri, scallions, and cilantro. (Gluten-free)
