Grilled Aubergine

This is one of the most delicious vegan dishes I've had at a restaurant! Every element was tasty, from the soft, grilled aubergine to the sumac flavoured red onions. It's packed with baby spinach, toasted almond flakes, chickpeas, broccoli and these aubergines that have been grilled until soft and succulent. Topped with a light mango curry sauce 👌🏼
