Classic mozzarella pesto panini

A yummy healthy sandwich with vegan cheese. It would probably be easy to find such sandwiches with normal cheese but not vegan ones. Not so fond of red peppers though, especially since it was a bit cold and soggy because I did delivery. Nice green leaves and garlic pesto and cheese of course. But for this small size and ingredients, $10 at the regular price is too much, the discounted set meal I got is more reasonable. I'd probably prefer to get the sandwiches with mock meat in the future as the ingredients for this are quite commonplace. Together with the set meal it made for an ok meal portion, by itself it wouldn't be enough for a meal.

Miyokos mozzarella with EVG home grown and homemade pesto was really yummy. I ordered this with my groceries for lunch on a WFH day. #veganisnotscary
