Celery Root Stake With Cashew Cheese and Avocado Puree

This celery root stake and a garden salad was the only vegan dish on the menu but I was pleasantly surprised at how good it was. My husband and my 2 kids all ordered this and we all ate everything. Very flavorful and unique. If you visit and it's on the lunch menu, I would highly recommend trying.
