MN Made: 2024 wine dinner with classic Minnesotan dishes, elevated and veganized at J Selby's. 5th course, served with Dr. Pauly-Bergweller Spatlese Riesling
Seeing carrot ice cream on the menu didn't really pique my appetite, but this ended up being a highlight of the night. The carrot flavor really wasn't too strong. I don't know if I'd say I really tasted it at all. The ice cream wasn't just plain vanilla though, so maybe there was a bit of earthiness to it. Carrots are sweet too, so maybe I was just tasting the sweetness from it. This ice cream was topped with caramel and granola. This was INCREDIBLE. The caramel was so sweet and delicious and I love a good crunch on my ice cream. It was such a perfect topping. This dessert is supposed to resemble brown sugar carrots that are often served during holidays. It's similar to brown sugar sweet potatoes. I really loved this interpretation. I like that it was garnished with a tiny sprig of carrot top too.
This was paired with a riesling. I used to love riesling, but now they're just a bit too sweet for me. This was definitely sweet! A wine needs to be though if it's going to hold up to such a sweet dessert.
