Basil Cashew Pesto Pasta

Delicious pesto pasta, complete with baked cashew nuts and pan fried shiitake mushrooms. There is a nice herb fragrance and the sauce is bursting with umami.

Served with sliced shiitake mushrooms and king oyster mushrooms along with roasted cashews. I liked the vegan pesto cashew cream which was pretty fragrant despite being allium-free! My non-veg father also loved this, possibly also because he's a fan of nuts. However I did feel that it got somewhat monotonous halfway through; perhaps there could have been a dash of black pepper / chilli flakes / Jalapeño / lemon juice. The pesto sauce is so good but the cashew,halfway thru d dish makes us feel so full. So i add chilli flakes to balance out the taste. Served with cashews n mushroom. Lovely dish.

The taste is great and very fragrant! Though you will get a bit sick of the taste after awhile, almost till the end.. probably due to the cream base inside. #veganisnotscary
