I verified with the manufacturer that the glycerin in the product was plant-based. The noodle
consistency and flavors of these cold noodles is spot on perfect. I think the vegetable glycerin is what makes the noodles so good! However these noodles did have quite a bit of fat and sodium. They do have a little bit of calcium, iron and potassium. I will probably buy these noodles again.
