if you keep it from cooking, it imitates creme fraiche rather well, sadly I'm looking for an alternative I can use in casseroles. Because of the high temperature it starts cooking and became rather watery. So I'm not going to use it in oven dishes again. But I will try out some sauce dishes with this!
