I substituted the 3 medium eggs for 1/4 cup of applesauce and a tablespoon of apple cider vinegar. The texture and taste is amazing, so soft, light with a strong vanilla flavour. I sandwiched it with biscuit spread . Considering using this product for when I make the next birthday cake
