Tori on a rainy Friday night! What a great excuse to get the best ramen in the city and try another Vegan Chef Challenge entry! #tcveganchef

The menu states that this is a Korean baby pumpkin cake while the Vegan Chef Challenge website states that it also has zucchini. Either way, it's a delicious fritter! It also has avocado, corn mayo, and pickled onion, with a lemon wedge. I was surprised that this was almost fishy in texture. It really reminded me of a crab cake. I think the lemon added to that too. I really enjoyed this! It's very unique and stands out for the rest of the entries.
