This is the most authentic-tasting vegan #kimchi I’ve tried. It tastes just like regular non-vegan kimchi. They made it use vegetable broth instead of fish sauce. It smells really good too. Fermented just right, spiciness is great, and the cabbage is still crunchy. If you prefer it to be more sour I think it can be fermented further. Only downside is that it’s pretty expensive.
건강 (geongang) means healthy in Korean. It’s supposed to be “healthier” than the usual kimchi as the name suggests. There’s no added sugar. They used #monkfruit sweetener instead, which has no calories.
I’m a kimchi lover as you can tell. This is my third kimchi review.
